This is very tasty. I omitted the clove because I am not a fan and I added 1/2 tsp salt. I am just one of those people that thinks most sweet stuff needs some salt.
I did thicken it with some corn starch because I planned to put it over angel food cake and didn’t want the cake to get soggy. I did try cooking it longer to thicken, but the liquid was too thin for my intended use. I also added a couple tablespoons of Ol’ Smokey Salted Caramel whiskey because I had some handy and it sounded good, I was not wrong . 😆

When my company walked in the door, they each commented on how my house smelled like apple pie. I used it as filling for an apple pie, and it came out fantastic. I did make one minor adjustment. I added 1 Tblspn corn starch dissolved in cold wter and then mixed with some of the liquid in the pot. o/w it would have been a bit watery. Delicious flavor overall! All my friends have now asked for the recipe.

In reply to Samantha. That sounds like such a wonderful way to celebrate your mom’s birthday. I’m so glad the compote was a hit! It’s amazing on waffles, and you’re right, it would be absolutely delicious spooned over individual slices of cheesecake (since it doesn’t have cornstarch, it may be a bit too runny for the whole cake).

I also put allspice in mine and let it cook down maybe 20 minutes. It is amazing by itself, on pancakes and in yogurt so far. Looking forward to trying it on ice cream this weekend.
