In reply to Sabrina. Hi Sabrina, I totally understand it sounds nuts and yes you are reading it correctly. The towel helps keep the ramekins from sliding all over the roasting pan keeping the Pots de Creme intact. I hope you enjoy!

So you put the ramekins on a towel in the dish, then bake them in the oven with the towel still in the dish? I feel like I’m not reading this right!
