Even though I didn&#039;t have lemon extract, it still came out delicious, and believe me, I&#039;ve tried a few lemon cake recipes in my time. The texture on this one is perfect, not too dense, not too crumbly. Your pro tip about measuring flour made the difference, I will use that again for sure, thank you! I fluffed my flour with a whisk before measuring. Also, I use a silicone bundt pan, which is really wonderful as it needs no butter or anything at all to release the cake.
