My only other comment would be that mere mortals would need at least 1/2 hour prep with all the chopping, mincing, roasting the corn and making the dressing. Worth every minute.

Hi Linda! That is such a sweet compliment! Thank yo so much! To replace the mint my top suggestions would be dill, more basil, tarragon or add more lemon zest. You definitely can use thyme also, however it has a much more earthy and savory flavor compared to the bright, fresh lift that mint brings. I hope this helps. I would love to hear how it turns out.

I am not crazy about mint. Should I sub another herb, maybe fresh thyme or just leave it out. I love your recipes. I make your pico de gallo all summer.

I was super hesitant about adding in sugar snap peas. Not sure why. They added a delicious crunch. This salad is a keeper!

I made this last year for Memorial Day with my family and it was very popular. Now I am coming back to this recipe since I was requested to bring it again this year. It is a new tradition.
