Creamy Cucumber Tomato Salad is a light and refreshing dish that brings together cool cucumbers, sweet tomatoes and a creamy dill yogurt dressing for an easy, healthy side that makes any lunch or dinner more delicious.

Ingredients

For the Dressing

  • 2/3 cup Greek yogurt *fat % of choice
  • 2 tsp lemon juice *aboout 1/2 lemon
  • 2 cloves garlic *crushed
  • 2 tsp dried dill *about 2 tbsp fresh
  • salt & pepper to taste

For the Salad

  • 1 lg English cucumber *cut into half moon shapes
  • 1 pint grape tomatoes *cut in half
  • 1/2 med red onion *cut into strips
  • 1 cup chopped chives

Instructions

  • In large sized mixing bowl whisk together ingredients for dressing.
  • Toss in cut cucumber, tomatoes, red onion and chives. Stir well.
  • Refrigerate for 1-2 hours before serving. Served chilled.
