Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice *about 1/2 lemon juiced
  • 2 medium garlic cloves *crushed or minced
  • 2 tsp dill
  • salt *to taste
  • 15 oz can cannellini beans *rinsed and drained
  • 1/4 cup diced red onion
  • 1 cup cherry tomatoes *cut in half
  • 1/2 large English cucumber *cut into large chunks
  • 2 oz feta *crumbled

Instructions

  • In a medium sized bowl whisk together first 5 ingredients. 
  • Toss in remaining ingredients. Mix well and refrigerate. Enjoy cold.
