Italians really do seem to have a love affair with lemons.
This makes total sense as to why my Italian heart ADORES all things lemon!!!
It is no surprise then that I would experiment with lemon zest and Italian herbs to come up with this refreshing, savory and drool worthy Beef Rub Recipe.
My husband went bonkers for the chuck roast with this Roast Beef Seasoning. My niece’s words were “HMMMMM, that yummy!” and my dog licked his dish clean.

What is Beef Rub
Beef Rub is a mixture of spices and herbs that is rubbed on all sides of a roast or is used as a topside rub. This particular recipe really amps up the flavor factor of chuck roast that is already a very flavorful cut. Something to keep in mind, rubs are generally used in a low and slow cooking approach, similar to how my Best Dry Rub Ribs of Your Life and my Husband Approved Dry Rubbed Chicken are made. However, rules are no fun unless broken every once in awhile, just like how I broke the rules with this mouthwatering Dry Rubbed Grilled Chicken Sandwich.
How to Make Beef Rub
There are three main steps to making this Roast Beef Rub Recipe (two steps if using dehydrated lemon zest).
- Grind the herbs.
- Zest lemon, add to herbs and grind.
- Blend the herb/zest mixture with the rest of the spices.
Meals To Make Using This Roast Beef Rub
Some of my favorite meals to make with this rub are my Hot Roast Beef Sandwich or on top of a pot roast cooked with carrots, onions and potatoes.

My first suggestion is to check with your local grocery store as many of them now carry an organic store brand. Store brands will always be much more affordable while still offering quality. If that is not an option, check out the deals below.

**Using fresh lemon zest makes for an excellent topside rub for boneless chuck roast. Dehydrated lemon zest works well when covering all sides of roast with rub.
