Italians really do seem to have a love affair with lemons. 

They make an appearance in everything from their main dishes to salad dressings and even drinks

This makes total sense as to why my Italian heart ADORES all things lemon!!!

It is no surprise then that I would experiment with lemon zest and Italian herbs to come up with this refreshing, savory and drool worthy Beef Rub Recipe. 

My husband went bonkers for the chuck roast with this Roast Beef Seasoning. My niece’s words were “HMMMMM, that yummy!” and my dog  licked his dish clean.

Needless to say, this Beef Rub is Amazingly Lipsmackingly DELICIOUS!!!

What is Beef Rub

Beef Rub is a mixture of spices and herbs that is rubbed on all sides of a roast or is used as a topside rub. This particular recipe really amps up the flavor factor of chuck roast that is already a very flavorful cut. Something to keep in mind, rubs are generally used in a low and slow cooking approach, similar to how my Best Dry Rub Ribs of Your Life and my Husband Approved Dry Rubbed Chicken are made. However, rules are no fun unless broken every once in awhile, just like how I broke the rules with this mouthwatering Dry Rubbed Grilled Chicken Sandwich

How to Make Beef Rub

There are three main steps to making this Roast Beef Rub Recipe (two steps if using dehydrated lemon zest).

  1. Grind the herbs.
  2. Zest lemon, add to herbs and grind.
  3. Blend the herb/zest mixture with the rest of the spices.

What is the best way to grind the dried herbs?

The easiest way would be to use a food processor or this. Another option that requires a little more effort is to use a mortar and pestle

How do I zest the lemons for this rub?

I have found the easiest way to zest the lemons for this beef rub recipe is using a simple vegetable peeler. Just make sure to peel only the zest, leaving behind the white pith as the can be somewhat bitter. 

Where do I find affordable organic spices?

My first suggestion is to check with your local grocery store as many of them now carry an organic store brand. Store brands will always be much more affordable while still offering quality. If that is not an option, check out the deals below.

How long will this rub last?

If using fresh lemons, blend and use this rub the same day. However, if using dehydrated lemon zest this rub recipe can last for several weeks, if not months if stored in an airtight container

Ingredients

  • 2 tsp dried thyme
  • 1 1/2 tbsp dried rosemary
  • 2 lg dried bay leaves
  • 2 tsp dried fennel seeds
  • zest of 3 lemons *or 2 tbsp dried lemon zest
  • 2 tsp sea salt
  • 1/4 cup granulated sugar
  • 3/4 tbsp onion powder
  • 1 1/2 tsp garlic powder
  • 2 tsp black pepper

Instructions

  • Place thyme, rosemary, bay leaves and fennel in a food processor. Process until roughly chopped, about 2 mins. Meanwhile, zest the lemons using a vegetable making sure to avoid the white pith. Add zest to processor and process until finely chopped, about 3 more mins. 
    If using dehydrated lemon zest eliminate second round in food processor. 
    Remove mixture to a med sized mixing bowl. Add in the remaining 5 ingredients and stir well. 

Notes

*Please use as many organic ingredients as possible. 
**Using fresh lemon zest makes for an excellent topside rub for boneless chuck roast. Dehydrated lemon zest works well when covering all sides of roast with rub.
***This rub is PHENOMENAL when used in my Hot Roast Beef Sandwiches recipe.
