“I am getting bored of everything I can eat.”

These were words recently spoken by a reader and I have to ask you, do you ever feel this way? I know I do sometimes.

It is just so easy to get stuck in the same weekly meal rotation and before you know it, a recipe that worked so well for so long just gets so darn boring. 

That is how this Creamy Cucumber Tomato Salad came to be. 

I wanted side dish that was light, easy and refreshing but a little different than my normal salads

It was an absolute no-brainer that it had to have some of my favorite flavors of lemon, dill, chives and garlic.

This Cucumber Tomato Salad was the answer.

It is perfect for chasing the boredom away at lunch or dinner and it also great for BBQ’s and cookouts.

Creamy Cucumber Salad Ingredients 

Grape Tomatoes– Often confused with cherry tomatoes, grape tomatoes are firm small tomatoes about the size and shape of a grape. They have a longer life and are less fragile than cherry tomatoes, making them perfect for this Cucumber Dill Salad.

English Cucumbers– The longer and skinner counterpart to the traditional cucumber, English cucumbers work great in this recipe because of their very small seeds and the skin being edible. 

Red Onion– With their mild bite and beautiful color, thin slices of red onions are a wonderful addition to this veggie side dish. 

Greek Yogurt– Thick and creamy with a slight tang, Greek yogurt makes a wholesome and delicious base for the dressing. Either nonfat, low-fat or whole milk Greek yogurt can be used. 

Lemon Juice– Helping to marry the flavors, the extra acidity of lemon juice brings vibrance to this salad. 

Garlic Cloves– If you love garlic then you know this is a must in helping the dressing to pop with flavor. However, 1-2 medium sized garlic cloves is all you need. 

Dill– My absolute favorite herb, dill is aromatic and adds a fresh and delightful flavor. 

Fresh Chives– With a very delicate flavor, chives add an additional layer of fresh herbiness. 

How To Make Creamy Cucumber Tomato Salad

The simplicity of this cucumber and tomato salad makes it the perfect dish for busy evenings or an impromptu backyard BBQ. Follow these simple steps.

  1. Whisk together ingredients for dressing in a large bowl.
  2. Cut veggies and add into dressing.
  3. Toss well and refrigerate until serving. 

How long does this salad last?

If both English cucumbers and grape tomatoes are used, this creamy cucumber salad can last safely for up to 3 days.

Ingredients

For the Dressing

  • 2/3 cup Greek yogurt *fat % of choice
  • 2 tsp lemon juice *aboout 1/2 lemon
  • 2 cloves garlic *crushed
  • 2 tsp dried dill *about 2 tbsp fresh
  • salt & pepper to taste

For the Salad

  • 1 lg English cucumber *cut into half moon shapes
  • 1 pint grape tomatoes *cut in half
  • 1/2 med red onion *cut into strips
  • 1 cup chopped chives

Instructions

  • In large sized mixing bowl whisk together ingredients for dressing.
  • Toss in cut cucumber, tomatoes, red onion and chives. Stir well.
  • Refrigerate for 1-2 hours before serving. Served chilled.
